Avocados are one of the easiest and most versatile sources of tasty nutrition around. They’ve been known to squash hunger, boost energy, lower cholesterol, and reduce inflammation, thanks to 15 grams of heart-healthy fats, along with fiber and tons of antioxidants. (Did you know over 75 percent of avocado’s total fat content is good fat?) In a U.S. survey of over 17,000 subjects, researchers found people who ate avocados tended to weigh less, have less belly fat, and were half as likely to have metabolic syndrome, which means a lower risk for heart disease.
We love keeping one or two avocados in our kitchens for sprucing up a plain dish. But after stumbling on tons of healthy recipes that use the tasty green fruit as the centerpiece of a recipe (think stuffed avocados) rather than an added ingredient, we had to share the love. We love the ease of it: just halve the avocado, scoop out its seed, and fill the space with different ingredients, depending on your taste and mood. You can serve them as appetizers at your next family get-together, eat them for breakfast, or have them as a side dish for lunch or dinner. Here are three of our favorite stuffed recipes.
