Dress Up Dinner with Seasonal Salads

These 3 cold salads take advantage of the best produce summer has to offer while being ready to go in under 10 minutes. Pair ’em with a 3-minute Freshly meal and you’ve got a whole feast in no time.

1. STRAWBERRY & WATERMELON SALAD
Watermelon is not only the perfect summer fruit, it’s also 92% water, making it a great hydrating ingredient during hot summer months. Add in the berries and fresh greens and you’ve got a dose of antioxidants, too.

What you’ll need:
Arugula or favorite lettuce
Watermelon
Strawberries
Raspberries
Feta or goat cheese
Mint or basil leaves
Balsamic for drizzling
Olive oil to taste

2. GRILLED STONE FRUIT SALAD
We’re using the word “grill” loosely here—grill pans or fresh fruit work just fine for this tasty summer dish. 

What you’ll need:
Peaches and/or nectarines
Cherries
Plums
Mint leaves
Chopped toasted hazelnuts or pine nuts
Apple cider vinegar (optional)
Drizzle of olive or avocado oil (optional)
Sprinkle of sea salt (optional)

This meal goes great with our BBQ pulled pork.

3. CORN SALAD
There’s nothing tastier and sweeter than fresh summer corn. Take advantage of it with a cold salad that’s as easy to make as it is customizable. Add beans, swap herbs, remove jalapeños—do it up the way you like. 

Our version includes:
Corn (use kernels fresh from cob or blanch no more than a minute) + sliced red onions + diced red peppers + diced jalapeño + lime juice + olive oil + chopped fresh cilantro + salt and pepper to taste

This salad goes great with our Chicken & Rice Pilaf.
