Crunchy & Healthy Chicken Lettuce Cups: An Easy Snack We Love

We love any recipe that’s affordable, quick to assemble for friends & family, and packed with clean, healthy ingredients. You might recognize chicken lettuce wraps from P.F. Chang’s appetizer menu, but you can make this refreshing gluten-free, protein-packed version from health & fitness blogger, Cassie Ho at home (for $2.30 per serving!) We love Cassie’s recipe because it has 30 grams of delicious protein, 8 grams of net carbs, and simple, all natural ingredients – that hits all the marks of our Freshly food philosophy. We love that we have all the ingredients in our pantry already, like garlic, natural peanut butter, coconut milk (unsweetened), Greek yogurt, red apples, celery stalks, chopped peanuts, iceberg lettuce, and of course, boneless, skinless chicken strips.

You also just need one skillet to make the dish, and with five simple steps, we estimate cooking/prep time rounds out to under 10 minutes.
