We love the idea of a Mother’s day brunch in place of more material gifts. How about making a brunch spread that’s healthy, delicious, AND includes a touch of coconut? We stumbled on this grain-free, paleo-friendly recipe from blogger Monique Volz of Ambitious Kitchen (we previously featured her chocolate chip cookies on our post about simple & healthy gluten-free recipes), and had to share. Here at Freshly, we’re all about eating healthy without depriving yourself of good taste, and are constantly impressed by recipes that pack a solid nutritional punch without sacrificing flavor. This pancake recipe uses nut butter for a fluffy result (we personally like almond butter), and we love that Monique tops them with wild blue berries – a natural source of sweetness.
