We love the idea of a Mother’s day brunch in place of more material gifts. How about making a brunch spread that’s healthy, delicious, AND includes a touch of coconut? We stumbled on this grain-free, paleo-friendly recipe from blogger Monique Volz of Ambitious Kitchen (we previously featured her chocolate chip cookies on our post about simple & healthy gluten-free recipes), and had to share.
