For the last 33 years, Katherine Aeby has been able to manage her Type 1 diabetes with an insulin pump therapy and a healthy diet—with zero complications. The 52-year-old resident of Placitas, New Mexico likes to stay active and loved to cook healthy meals for herself—but things changed when she and her husband separated in 2014. She found it difficult—and boring—to cook for one so she decided to try Freshly: “It hits all the necessary notes: carb-conscious foods cooked with fiber-rich ingredients and lean protein,” she says. Plus, the meals fuel her hikes, mountain biking, skiing and gardening.
We chatted with Aeby about how being active helps her manage her diabetes, and how Freshly is fueling her wellness journey and helping her thrive:
Q: What prompted you to give Freshly a try?
A: I discovered Freshly in 2017 when an email popped up in my inbox. I had been cooking once a week and eating the same leftovers every day for seven days. That was extremely unfulfilling so I tried different food delivery services. For one reason or another—they were too high in calories, too expensive or had too many carbs—I cycled through them, but didn’t like or stick with any until I found Freshly.
Q: What aspect of the meals appeal most to you?
A: Initially, it was the nutritional value of the meals and the convenience of having healthy, fully-prepared food delivered to my doorstep. Having diabetes, I eat in order to live and taste has been tertiary. But that’s not the case for my new partner: he enjoys flavorful food. And we’ve just gone from ordering six Freshly meals per week to nine because we’re both so impressed by the fact that your meals are nutritious and delicious.
Q: Given all the nuances of living with Type 1 diabetes, how does Freshly fit into your life?
A: Maintaining a healthy weight is a big part of managing my diabetes. To do this, I try to consume between 350 and 450 calories per meal, which I can do with Freshly meals. And the fact that many are low in carbs and high in protein and fiber means they are easier for my body to process.
Q: How has Freshly helped make your life easier?
A: Freshly has made it simple and convenient to take good care of myself. When I first became a Freshly customer, I was working two jobs. My veterinary technician job went from 7:30 a.m. to 5:30 p.m. My second job was at a specialty wine shop, where sometimes I worked until 8:30 p.m. I was on my feet no matter what, so the last thing I wanted to do after returning home was stand again to cook and then eat the same meal for seven days straight or freeze and store it. No, thank you!
Q: What’s your favorite Freshly meal?
A: I absolutely adore the Cauliflower-Shell Bolognese. I love that the cauliflower pasta shells are grain and gluten-free. Plus, the hearty bolognese sauce is delicious—what’s not to love?
Q: Were you surprised by any part of being a Freshly customer?
A: I was pleasantly surprised by the variety of menu choices, the creative ingredients and cooking methods, and the freshness of the meals. The customer service has also been great, and I appreciate the flexibility of the subscription. I was able to have meals shipped to my stepchildren when they needed it, to friends who were experiencing major life changes, and to a relative who was recovering from surgery. Q: How does Freshly help fuel your active lifestyle?
A: Making healthy food choices helps me feel better physically and mentally. I don’t like the idea of “working out,” so I take long walks, and go hiking and climbing in the High Country. I thoroughly enjoy mountain biking, snowshoeing, and skiing. I’m passionate about nature and being outdoors does wonders for me so I spend a good chunk of my time gardening, landscaping, and puttering around in the yard. I also love wine and am a base-level sommelier. And, as if that’s not enough, my partner and I travel quite a bit. We love to actively play and engage in life!
Q: Why is being active such an essential part of your life?
A: Being active helps keep my diabetes and weight in check. But, more than that, being outdoors calms my spirit. It helps me feel more connected to the world, myself, and the people I’m with.
